This is everything you love about traditional stuffed bell peppers but in a hearty soup! The base is a rich beef and tomato broth then loaded with chunks of green bell peppers, onions, carrots, ground beef. Top with a scoop or rice and cheddar cheese. This soup gets a standing ovation. Everyday the flavor gets better!
Ingredients
- 1 lb ground beef
- 4 large green bell peppers, chopped
- 1 large onion, diced
- 3-4 large carrots, finely diced
- 28 oz crushed tomatoes
- 12 oz diced tomatoes
- 32 oz beef stock or beef bone broth
- 3 tbsp brown sugar
- 3 tbsp minced garlic
- salt and pepper
- cooked rice
- cheddar cheese
Instructions
- In a large pot brown the ground beef. (If necessary, drain any extra grease)
- Add in all the ingredients. (except rice and cheese)
- Stir well and simmer for 1 hour.
- Serve with a scoop of rice and shredded cheddar cheese.
You could easily do this in a crockpot as well!!
