Triple Berry Pie

My Triple Berry Pie is easy as 1 2 3. No, seriously it really is! This is a super quick and easy pie that you can throw together anytime bc it’s using frozen berries and store bought prepared pie dough. (Though you can totally make your own if you’ve got the time!) Contrary to other similar recipes the berries DO NOT have to be defrosted! In fact, frozen will work better. Don’t let the ease fool you, this pie tastes every bit as homemade and delish as one you’d spend half the day baking.

Ingredients

  • 1 box Pillsbury Refrigerated Pie Crusts (contains 2 rolled crusts)
  • About 6 cups or 24 oz bag of Frozen Triple Berry
  • 1/4 cup cornstarch
  • 1/3 cup granulated sugar
  • 1 Tablespoon lemon juice
  • 1 egg + 3 table spoons of water to create an egg wash

Instructions

  1. Preheat oven to 375
  2. unroll the dough and arrange one crust into the bottom of a glass pie shell, unroll the second crust on a clean surface and let come to room temp as you prepare the pie. We’ll come back to this one to prepare the top.
  3. In a large bowl add the berries and toss with cornstarch, stirring well to evenly coat the berries
  4. Add the sugar and lemon juice and stir well
  5. Into the bottom of your pie shell pour the berries over the crust. *please note you do not pre cook the crust first*
  6. Cut the remaining pie crust into 1-2 inch strips and make a lattice top. Cinch the edges together.
  7. Using a brush or your fingers rub the egg wash over all the exposed crust to create a golden brown crust.
  8. Bake at 375 for 45 minutes and then 400 for the last 10 minutes.
  9. Let pie completely cool before cutting.

Enjoy with fresh whipped cream or vanilla ice cream!!
